Afang Soup is a nutrient-rich, flavorful delicacy from the Efik and Ibibio people of Southern Nigeria. Made with finely sliced Afang (wild spinach) and waterleaf, this soup is slow-cooked in palm oil with your choice of assorted meat, tender beef, or fresh fish. Rich in texture, earthy in flavor, and deeply satisfying, Afang Soup is perfect with fufu, semovita, or pounded yam.
Ingredients: Afang leaves (okazi), waterleaf, palm oil, crayfish, stockfish (optional), assorted meat / beef / fish, Scotch bonnet peppers, onions, periwinkle (optional), seasoning cubes, salt.
